Herbs and spices were naturally-occurring seasonings derived from the leaves, stems, roots or seeds of plants or minerals. Spices were typically used to create or enhance the flavor of foods and beverages. Herbs, in addition to being used as a seasoning, could be used as a medicine.

In 2268, Doctor Leonard McCoy, after tasting the tablet that a Fabrini man gave him, mentioned that it tasted like an ancient herb derivative. (TOS: "For the World is Hollow and I Have Touched the Sky")

While raising her granddaughter Beverly Crusher, Felisa Howard taught her what she herself had learned about roots and herbs. (TNG: "The Arsenal of Freedom")

Dr. Julian Bashir recalled watching an Invernian girl die of an ailment that could have been cured with an herb that was growing all over the area, though he did not know that at the time. (DS9: "Melora")

In 2371, the holographic character Freya asked The Doctor whether he was a master of herb lore. he replied that he supposed he was. (VOY: "Heroes and Demons")

The popular children's rhyme "What Are Little Boys Made Of?" asserted that girls were made of sugar and spice. (TNG: "The Outcast")

In 2372, Neelix offered to make B'Elanna Torres one of his Jibalian seven-spice omelettes. (VOY: "Prototype")

Prior to the development of the akoonah, some Native American tribes used psychoactive herbs to assist in vision quests. (VOY: "The Cloud")

The Kadi of the Delta Quadrant did not approve of spices, or anything else that "might inflame the senses". (VOY: "Someone to Watch Over Me")

In 2377, Neelix felt responsible for making Gar sick, as he had added a few exotic spices to the Dralian's food after receiving complaints about its blandness. (VOY: "Critical Care")

Also that year, Neelix prepared his grandmother's recipe for Tuvok with no herbs and spices, an alteration which the Talaxian claimed rendered it "practically tasteless." (VOY: "Body and Soul")
