Sandríne was the owner of Chez Sandríne in Marseille, France on Earth. The bar was run by her family for more than six hundred years.

To recall his time spent at Chez Sandríne, Tom Paris created a holographic replica of the bar aboard the USS Voyager. He also created a holographic version of Sandrine.

The holographic Sandrine flattered Paris and became jealous when another holographic character named Ricky had designs on Paris. Sandrine then attempted to seduce Harry Kim. She told Kim that he had a lot to learn, and that she had a lot to teach him. (VOY: "The Cloud")

Later on, she became attracted to The Doctor at Kes' second birthday party that was held at her bar. (VOY: "Twisted")

Sandrine was played by actress Judy Geeson who filmed her scenes for "The Cloud" on Tuesday 6 December 1994 and for "Twisted" between Monday 24 April 1995 and Friday 28 April 1995 on Paramount Stage 16.
