(Removed remark about the replimat being only one of three areas big enough for informal gatherings. DS9 had several restaurants, Quarks amongst them. Mentioning Vic's didn't make a lot of sense because that's a program ran in a holosuite at Quark's)

A replimat was a self-serve eatery where the foods and beverages are produced by replicators.

There was a replimat located on the Promenade of Deep Space 9 where one could order a wide variety of food and beverages from several replicators. However, the replimat did not feature Ferengi foods.(DS9: "Rules of Acquisition")

The replimat was one of several areas on the station suitable in size and seating accommodations for large social gatherings and informal meetings. The replimat was also where the station's inhabitants ate a majority of their midday meals and the site of frequent lunch appointments. (DS9: "Emissary"; TNG: "Birthright, Part I")

It was at the replimat that Doctor Julian Bashir first met his future friend Elim Garak. (DS9: "Past Prologue")

In 2369, Julian Bashir met a Bajoran woman for a date at the replimat. (DS9: "Q-Less")

The same year, a member of Pardshay's species tried to make business deals with a Lissepian captain at the replimat. (DS9: "Progress")

The replimat was known to be frequently busy and long queues were a regular occurrence. Once such example was observed in by Garak in 2370 shortly before he was taken ill. When Bashir queued for food in a Sanctuary District in 2024, after he'd gone back in time, he said he thought that queues for the replimat were bad. (DS9: "The Wire", "Past Tense, Part I")

In 2372, Quark told Worf and O'Brien that if they didn't want so much noise they should go and visit the replimat. (DS9: "The Way of the Warrior")

There was a Japanese replimat on the Embarcadero in San Francisco. Kathryn Janeway recommended it to Chakotay when he was preparing to infiltrate Species 8472's San Francisco simulation on Terrasphere 8 in 2375. (VOY: "In the Flesh")

Background

The replimat set was re-dressed for the Star Trek: The Next Generation sixth season episode "Chain of Command, Part I" in 1992 as the bar on Torman V.
