Red was one of the three primary colors. It could be associated with honor or prestige, in the case of a red carpet, for example.

Red was one of the colors chosen for the national flags of the United States, France, Germany, and Italy. (TNG: "The Last Outpost")

On Federation star charts of the 23rd century, 24th century, and 32nd century, the color red was used for Klingon territory and locations. (SNW: "Strange New Worlds"; PIC: "Maps and Legends"; DIS: "Scavengers")

Young Annika Hansen's favorite color was red. In 2374, as a liberated Borg drone, Seven of Nine, she told Captain Kathryn Janeway this after Janeway had earlier mentioned Hansen's favorite color as being one of the things they didn't know about her yet. (VOY: "The Gift")

Later that year, Harry Kim saw a dozen shades of red and gold in the geological formations on a Y class planet. (VOY: "Demon")

In the 32nd century, the holographic bird alarm clock owned by Aditya Sahil would change its color daily, with red being one of the colors. In 3188, Michael Burnham described her friend Sylvia Tilly as having red hair. (DIS: "That Hope Is You, Part 1")

Red carries the dubious distinction of identifying those Starfleet personnel most likely to die in episodes of Star Trek: The Original Series.
