Parsons was best known for her memorable role as Coach Beulah Balbricker in all three installments of the Porky's movie series, which also featured The Next Generation guest star Wyatt Knight and Star Trek VI: The Undiscovered Country star Kim Cattrall, who played in the first Porky's movie. Parsons also filled character roles in the movies Sudden Impact (1983), Steel Magnolias (1989, featuring Bibi Besch and Tom Hodges), and Ladybugs (1992, with Jandi Swanson and Jeanetta Arnette).
