Haggis, a traditional dish in Scotland, was made from the liver, lungs, and heart of a sheep, with oats, groats, or other fillers, seasoned and then stuffed into the sheep's stomach. It was boiled and often served with whisky while ushered in by pipers.

Montgomery Scott referenced haggis twice; once when in trouble with Ambassador Robert Fox ("The haggis is in the fire for sure") and once when a recreation of Abraham Lincoln was touring the USS Enterprise ("Why, they're probably looking up a plate of haggis in the galley."). (TOS: "A Taste of Armageddon", "The Savage Curtain")
