Fish were cold-blooded aquatic vertebrates. Fish were often used for food.

After Jonathan Archer restored a damaged timeline, a fish could be seen in the time stream as the timeline realigned itself. (ENT: "Storm Front, Part II")

Sometimes gormaganders, which were actually space whales, were incorrectly referred to as fish. In 2256, Captain Lorca did this and he was corrected by Saru, much to his annoyance. (DIS: "Magic to Make the Sanest Man Go Mad")

On one occasion within the Dixon Hill holoprogram, Beverly Crusher asked if Jean-Luc Picard was a fish after being told by Data that Picard was "on ice" and "being grilled" in the program. Data, as a participant in the program, was using 20th century slang for being detained by the police and interrogated. (TNG: "The Big Goodbye")

The fish on the planet Aldea became extinct. (TNG: "When The Bough Breaks")

Captain Picard also kept a stone plate with a fossil fish in his ready room aboard the USS Enterprise-D in 2365. (TNG: "The Dauphin")

When in 2369 the imaginations of the Deep Space 9 residents became reality, Julian Bashir created an illusory Jadzia Dax who compared the real Dax with a "cold fish". (DS9: "If Wishes Were Horses")

Fish was to be served at the welcome reception for the Evora held on the USS Enterprise in 2375. Captain Picard had the chef skip that course after it was discovered that the Evora enjoyed eating flowers and were thus possibly vegetarians. (Star Trek: Insurrection)

Both Benjamin Sisko and his father Joseph were skilled at cooking fish. Joseph would sometimes joke to the customers of his restaurant that they should thank him for just letting him look at the fish he had prepared for them. (DS9: "Equilibrium", "Homefront")

A holographic fish, called Spectrum, was seen in a fishbowl. (VOY: "Revulsion")
