Chez Sandríne as it appeared in the holographic program Paris 3

Chez Sandríne, also known as Sandríne's bar, was a small restaurant annex bar in Marseille that was established in the 18th century.

When Tom Paris was studying at Starfleet Academy he was a regular visitor at this establishment. Most of his time there was spent at the pool table. During his time on USS Voyager he created a holographic version of his favorite hangout for use on Voyager's holodeck. The holodeck program was saved under the file name Paris 3 and was used on a regular basis by the ship's personnel. (VOY: "The Cloud") Guests trying their hand at pool should remember that the table rolls a little to the east. (VOY: "Jetrel")

According to The Doctor, "Ensign Paris wiled away a good portion of his academy years here, no doubt to the determent of his scholastic performance." (VOY: "Someone to Watch Over Me")

In an alternate timeline, Paris spent most of his time at Chez Sandríne after having been left behind on Deep Space 9 after getting into a fight with Quark and getting arrested by Odo. (VOY: "Non Sequitur")

The conceptualization of Chez Sandrine was inspired by the recurring social environment of poker in Star Trek: The Next Generation. Brannon Braga stated, "We [...] wanted to create our version of the Enterprise's poker table. We thought pool might be fun, so we created an old Marseilles pool hall, and ended up using it quite a bit." (The Official Star Trek: Voyager Magazine, issue #5, p. 48)
Due to its repeated reuse, Chez Sandrine was built as a standing set, on Paramount Stage 16. (A Vision of the Future - Star Trek: Voyager)
