Cannibalism was the act of eating members of one's own species. Earth had cannibals at one point in its history, but this practice had ceased on the planet as of 2151. (ENT: "Broken Bow")

In 2152, Malcolm Reed became pinned to Enterprise NX-01's hull by a Romulan mine. Fearing he'd be blown up by the mine, he asked Jonathan Archer not to sever the spikes that held him there. He added that, if he let Archer amputate his leg, Chef would serve "roast Reed" for Sunday dinner. (ENT: "Minefield")

Klingons practiced a limited form of cannibalism, as it was a practice of their religion to eat the hearts of their enemies. (DS9: "Covenant")

Following the death of Captain Philippa Georgiou at the Battle of the Binary Stars, T'Kuvma pierced her heart and according to L'Rell, the House T'Kuvma feasted on her flesh. (DIS: "Will You Take My Hand?")

Following Kang, Koloth, and Kor's defeat of T'nag, they discovered his lifeless body by the river, whereafter they cut out his heart and all three of them feasted on it together. Following Kor's recollection of the story in 2373, Jadzia Dax joked that it was a "big heart". (DS9: "The Sword of Kahless")

In a ghost story told by Commander Charles Tucker in the first draft script of ENT: "Strange New World", a group of Tellarite survivors were referred to as having resorted to cannibalism. These Tellarites, according to the tale, had initially survived the crash landing of their Tellarite transport on Pluto, but had then eaten one another.
