Riker may have become an admiral only indication is from the alternate timeline in All Good Things...
Picard would never be an Admiral after Kirk told him not to more likely an ambassador

The countdown one kinda is tho as it formed part of the story for the Abrhamsverse, it was a movie tie in and written by the writers of the film!
If you want to be factual about it all then the answer to your question is no, we don’t have a clue what any of them did after because it’s all alternate timelines or apocryphal

Well, JJ Abrams threw things off because of the "alternate time line" and comics or novels might not be canon. But I was just thinking that if ST:TNG was 30 years ago, most (if not all) the senior officers should be at least Captain rank (or above, if still on active duty).

Agreed. Riker, Geordi, and Dr. Crusher were captains. Picard could've become admiral or ambassador, and I think Riker would have eventually made Admiral as well, although it did take him awhile to be captain, since he turned down so many promotions before, so who knows. Worf was an Ambassador to the Klingon Empire. O'Brien and Barclay taught at the academy. Dr. Pulaski was a brilliant doctor with a specialty in medical research and developing pioneering techniques. She had the rank of commander on the enterprise-d, then worked at Starfleet Medical, probably got promoted to captain, and with all her experience it would definitely make sense for her to have been promoted to Admiral as well.
I think Picard should have been promoted to either Fleet Captain or Admiral upon his retirement from Starfleet. Since money doesn't exist for the Federation in the 24th century, then the promotion would be more of an honorarium then as a way to have a larger pension.
